While it was once easier to get accommodation on Rottnest than a table at ex-Petite Mort chef Todd Stuart’s 20-seat diner in Highgate, the booking system has calmed down and it’s now far easier to experience arguably Perth’s best dego. The 10-course menu at $150 per person is definitely worth the effort and the money. Flavours ranging from delicate to banging (sriracha sorbet!), with local produce, polished service and excellent wine — no wonder Twenty Seats is so popular.
