From the fire brigade to the freezer: Luke Fox’s journey from firefighter to gelato maker

For Luke Fox, firefighting was the perfect career at first. The equal-time roster — four days on, four days off — gave him plenty of time to go surfing and play music at gigs around Western Australia. He had a good, stable income and was helping people, and his work mates felt like family.

But 18 months ago, after seven years in the brigade, Luke hung up his helmet for good. He threw caution to the wind and used his savings to buy a caravan shell, refitting it as a food truck and teaching himself to make his own non-dairy ice-cream in the kitchen of his share-house rental.
